Irish Beef Stew

Irish Beef Stew

I love soups with some heartiness to it, that’s why I’m a big fan of stews. This stew was made in the crockpot and has very little prep so you can set it and it will be done just in time. It smells amazing and really hits the spot! This is great for a cold day, a busy day or St. Patrick’s Day! 

Ingredients:

1 tablespoon olive oil

1.5 pounds beef stew meat, cut into 2 inch pieces

1 large white onion, diced

3 large carrots, peeled and chopped into 2 inch pieces

2 stalks celery, chopped

4 red potatoes, quartered

3 cloves garlic, chopped

2 teaspoons thyme

2 teaspoons oregano

2 teaspoons salt

4 cups beef broth

1/2 cup flour

1/2 cup water

2 cups frozen peas

Instructions: 

1) Pour olive oil into skillet and heat on medium high heat. Once hot, add the beef pieces. Cook for about 2 minutes, get a good sear on the meat then add it to the crockpot.

2) Add onion, carrots, celery, potatoes, garlic, thyme, oregano and salt to crockpot and mix to combine. Pour in the broth and stir again. Cover and cook on high for 4 hours or low for 8 hours.

3) Whisk together flour and water until a thick mix and pour it into crockpot. Stir well and add the frozen peas.

4) Cover again and cook for another 30 minutes. Serve with a side of Irish Soda Bread.
