Homemade Blueberry Sauce

If you were here for my Breakfast Tacos post, you know that February is National Hot Breakfast Month so I’ve been having lots of yummy dinners, including nice crispy waffles! If you don’t have a waffle iron, you can use your George Forman grill and get some nice and quick. Nothing beats a nice warm fruit sauce and this Homemade Blueberry Sauce is just the thing to make your waffles or pancakes taste even better! This recipe works for both frozen or fresh blueberries but if you do use frozen, make sure you let them thaw out for an hour or two before using.

Ingredients:

3 cups blueberries (fresh or frozen)

1 cup water

1/2 cup sugar

1.5 tablespoons cornstarch

3 tablespoons water

1/2 teaspoon vanilla

Instructions: 

1) In a small bowl, whisk cornstarch with the 3 tablespoons water. Set aside. Place blueberries into small saucepan. Cover with remaining water and add sugar and vanilla. Heat over medium-high heat until lightly boiling and blueberries start breaking up.

2) Add cornstarch mixture and bring to boil. Reduce to a simmer and cook until sauce reaches desired consistency. If the sauce gets too thick, you can add a tablespoon or two of water.

3) Remove from heat. Serve warm or let cool and store for a later date.
