It’s Sunday which means a lazy morning with time to cook a nice breakfast. I wanted to try homemade pancakes from scratch and not just reach for the Bisquick. I had some fresh blueberries that I wanted to use for something yummy and decided this was the best outcome. They were fluffy, thick and delicious! With Mother’s Day coming up, it’s always nice to have a good breakfast ready to go.
Ingredients:
1 cup flour
1 tablespoon sugar
3 tablespoons baking powder
1 teaspoon salt
1 egg
1 cup milk
2 tablespoons cooking oil
3/4 cup blueberries
Instructions:
1) In a large bowl, mix dry ingredients.
2) Add wet ingredients and blueberries and mix well.
3) Heat a greased skillet to medium high heat and pour batter onto cooking surface.
4) Cook until golden, about 2-3 minutes each side and serve immediately.
