Ham Bone Soup

There’s nothing like a baked ham. It smells amazing and the leftovers last forever! But if you are the thrifty type, it kills you to throw away the ham bone when it still has huge hunks of ham on it. This recipe is for you! It slow cooks so every last bit of that ham gets put to good use, and mixed with all the other ingredients…..lets just say that you will have a happy tummy! 

Ingredients: 

2 tablespoons butter

1 tablespoon olive oil

1 large white onion, chopped

3 garlic cloves, chopped

3 celery stalks, chopped

1 carrot, peeled and diced

1 ham bone with at least 1/2 cup of ham still attached

6 cups chicken stock

8 potatoes, peeled and chopped into chucks

1 cup whole milk

Salt and pepper

Instructions:

1) Heat a large stock pot to medium-high heat. Add the butter and oil and combine. Place ham bone and 1/2 cup ham if the bone didn’t have it attached. Cook until meat browns.

2) Add onions, celery and carrots. Cook for 3 minutes till softened. Add chicken stock and simmer on low for 30 minutes.

3) Add potatoes, up heat to medium-low and simmer for another 30 minutes.

4) Remove from heat, remove ham bone and pull off the remaining meat to add back. Add milk, salt and pepper.
