Gruyere, Cheddar and Tomato Grilled Cheese

Mmmmmm cheese. Is there a more magical thing on the planet? I would say that grilled cheese was a huge part of my life in college, I ate it on a fairly regular basis. Now I decided to up my game a little bit and broaden my horizons. Yes, there is a world beyond the usual Swiss and Mozzarella. Gruyere is an interesting cheese, it’s got this smoky taste that makes it stand out and mixed with the cheddar gives your grilled cheese this sophisticated taste. You will notice that I use mayo on here instead of the classic butter, there is a reason for that: mayo has a higher smoke rate. You can cook the sandwich longer to give it char without burning it. Ingredients: 

2 slices sourdough bread

2 tablespoons mayo

2 slices of gruyere cheese

1/4 cup cheddar, shredded

2 slices tomato

Instructions: 

1) Turn on your broiler.

2) Take the bread and spread the mayo on one side of each slice. Add gruyere and cheddar on top of the other side of the slices. Place mayo side down on baking sheet and place under the broiler until melty.

3) While broiling, take a skillet and heat over medium high heat. Remove bread from broiler, put on slice into skillet, add tomato and top with other slice. Cook on both sides until crispy.

    I love grilled cheese . . . its so easy to make! I have never tried it with tomato, though. That would be a nice change.

    I craved grilled cheese SO much when I was pregnant. You can’t beat a good grilled cheese sandwich, prego or not. This looks so good!!
