German Mashed Potatoes

I love potatoes! I can eat them any way imaginable which is why I’m all about making new creations with them. I saw a recipe for a classic potato salad recipe and decided to liven it up a bit and mix it with another classic, the mashed potatoes. This version is tangy and hearty, definitely something to keep in your back pocket! This takes this recipe beyond the BBQ.

Ingredients:

4 slices bacon

1/2 onion, chopped

2 lbs red potatoes

1 tablespoon flour

1 tablespoon sugar

1 tablespoon Dijon mustard

1/4 cup white wine

1/4 cup vinegar

1/4 cup water

Salt to taste

Instructions: 

1) Slice the potatoes thin and add to a large pot of boiling, salted water. Boil for 15 minutes until softened.

2) Fry the bacon slices in a skillet and set aside to drain on paper towels. Add the chopped onion to the drippings and cook. Add the flour, sugar and mustard and mix well. Add the white wine, vinegar and water and cook for 2 minutes. Add salt to taste.

3) Drain the potatoes and return to pot. Mash with masher and add the onion mixture. Mix well. Top with crumbled bacon and serve.

  1. This is very similar to my Nana’s German potato salad — except she adds torn leaf lettuce as well. So delicious! Thanks for sharing!

      1. One of my local stores sells a lower sodium bacon if you can believe it. It’s quite good and contains 50% less sodium then regular bacon. This is what I use.

    1. I’m so sorry! That was my typo mistake, yes, add the vinegar with the water and wine. If you want to add a little less vinegar or little more that’s ok, it’s totally to your taste.
