In honor of Father’s Day weekend I’m posting one of my husbands favorite breakfasts. I’ve been making this for him on all his special occasions and I never get a complaint. This is a great way to say “thank you” to the man in your life.
Ingredients:
1 canister of Grands biscuits
4 tablespoons cream cheese
1/8 cup of chopped spinach, squeezed of extra liquid
2 slices of american cheese folded into quarters
8 eggs
Instructions:
1) Bake biscuits according to package instructions.
2) Once out of the oven, cut the top off the biscuits and scoop out the inside. It should look like a biscuit bowl.
3) Put 1/2 tablespoon of the cream cheese, some spinach and one of the cheese quarters into each bowl.
4) Crack an egg into each bowl.
5) Return biscuits to oven for 20 minutes. I leave the cutoff biscuit tops out of the oven to avoid burning them. Just add them to the top when the 20 minutes are up.
And that’s it! So yummy and go great with a side of bacon.
Happy Father’s Day and feed him well!
