Bruschetta is a delicious appetizer and so easy to make! The garlic and basil help make the tomatoes super flavorful and pairs great with the toast. It’s always nice to have a recipe on hand if you have last minute guests coming over so they can have something to munch on. This can be put together in under 10 minutes so you have more time to socialize. Just make sure you get a piece for yourself before everyone eats it all ahead of you!
Ingredients:
4 Roma tomatoes, chopped
3 tablespoons Olive Oil
1/4 cup chopped basil
3 cloves garlic, chopped
1/4 cup grated Parmesan
Salt and pepper
1 baguette, cut into slices
1/2 cup Olive Oil
4 tablespoons garlic powder
Instructions:
1) Preheat oven to 450 degrees. Place baguette slices on a foil lined baking sheet. Use the 1/2 cup of olive oil and brush onto both sides of the bread. Bake for 6-7 minutes until crispy.
2) While bread is baking, take a large bowl and mix the tomatoes, 3 tablespoons olive oil, basil, garlic, Parmesan, salt and pepper.
3) Remove slices from oven and sprinkle tops with garlic powder. Spoon some bruschetta on top of the slices and serve!
