Crustless Zucchini and Asparagus Quiche

Now that it’s a new year, many people are trying to change bad habits and eat healthier. One of the most important and easiest ways to get a good start is to get a healthy breakfast going. It will jumpstart your metabolism and give you lots of fuel for the day. I know it can be hard to find healthy recipes but this Crustless Zucchini and Asparagus Quiche is a great one. It’s crustless so you can cut back on calories right off the bat, the veggies pack it full of vitamins and the eggs are making up your protein portion that will keep you full for hours. So right there you can start the day with a healthy meal that will set you right for the rest of the day! 

Ingredients: 

2 tablespoons olive oil

5 eggs

3/4 cup milk

1 tablespoon garlic powder

2 zucchini, sliced into coins

1/2 pound asparagus, chopped into pieces

Salt and pepper

1/2 cup shredded cheddar

Crustless Zucchini and Asparagus Quiche

Instructions: 

1) Preheat oven to 350 degrees. Heat an oven safe skillet on medium high heat. Add layers of zucchini and asparagus until done.

2) In a large bowl, whisk eggs, milk, salt, pepper and garlic powder. Pour evenly into skillet.

3) Cook for a bit until the egg edges start to firm up. Place into oven and bake for 35-40 minutes until quiche is set and no longer jiggling.

4) Remove from oven, sprinkle cheese on top and set under broiler for 3-5 minutes until nice and melted.
