I love how this recipe turned out! This Crockpot Creole Chicken is literally loaded with chicken. Instead of the usual pork sausage, I decided to cut down on the fat a bit by using Al Fresco chicken sausage. It comes in tons of different varieties so you can get the perfect flavor you love, (This isn’t a sponsored post, I just really love their chicken sausage). If you want a more authentically Creole flavor, try some andouille sausage. Ingredients:
2 boneless, skinless chicken breast
12 oz chicken sausage, cut into rounds
1 cup chopped white onion
2 cloves chopped garlic
a cup and a quarter of chicken broth
canned diced tomatoes
can tomato sauce
a can black beans
tablespoon cumin
1 teaspoon creole seasoning
1 teaspoon salt
2 green peppers, chopped
Optional: Rice, avocado and shredded cheddar to serve
Instructions:
Place all ingredients, in order, into the crockpot. Cover and cook for 7-8 hours on low and 3-4 hours on high.
Shred the chicken, add green peppers, and cook for another 20 minutes. Serve with rice if desired.
