Crispy Chicken Thighs

Anyone who does the grocery shopping knows that chicken thighs are a great bargain! You can get a bunch for relatively cheap but it can get boring if you run out of ideas for them. That’s why I love these Crispy Chicken Thighs! They cook low at first to not dry out the meat and they come out super juicy on the inside with that awesome crispy skin that’s full of flavor! 

Ingredients: 

4 bone-in, skin on, chicken thighs

2 tablespoons baking powder

1 tablespoon salt

1 tablespoon paprika

1 tablespoon garlic powder

1 tablespoon oregano

1 tablespoon onion powder

Instructions: 

1) Preheat oven to 250 degrees F. Line a rimmed baking sheet with foil and lay a rack on top. In a large, resealable bag, add the baking powder and spices. Dry the thighs throughly and add the the bag. Seal and shake to throughly coat with the dry mixture.

2) Place the chicken on the rack and bake for 30 minutes.

3) Increase heat to 425 degrees and bake and additional 40 minutes until browned. The skin should be nice and crispy and the inside should be at least 170 degrees inside. Serve with a side of Roasted Red Potatoes.
