Chocolate Chip Cheesecake Bars

Chocolate ChipCheesecake Bars

 

I’ve been in love with these for a long time! My college roommate used to make them for us and we would all just relish in its awesomeness. These are rich and decadent but oh man are they worth the extra treadmill time! If you want to impress people, this is the dessert to bring! 

Ingredients: 

Crust

2 1/2 cups all purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

2/3 cup butter, softened

1/2 cup sugar

2/3 cup brown sugar

1 egg

1 tablespoon vanilla

2 cups mini chocolate chips

Filling

8 oz cream cheese, softened

1/2 cup sugar

1 egg

1 teaspoon vanilla

Instructions:

1) Preheat oven to 350 degrees. Spray a 9×9 inch square pan with non-stick spray.

2) Mix together flour, baking soda and salt until well combined. In another bowl, mix butter, sugar and brown sugar until well mixed. Add egg and vanilla.

3) Combine wet and dry ingredients, mix well. Add in chocolate chips.

4) Take 2/3 of the mixture and line the bottom of the pan making sure the whole bottom is covered.

5) Mix cream cheese, sugar, egg and vanilla and spread over the bottom pan layer. Spread to cover fully.

6) Take the remaining crust dough and crumble over the top.

7) Bake for 40 minutes or until browned.

8) Allow to cool completely before slicing.
