Chili Lime Chicken Thighs

Since my recipe for Honey Garlic Chicken Thighs gained steam I decided to try another marinade and see if I can recreate the magic with Chili Lime Chicken Thighs. These cooked up so well! The skin was super crispy but the meat was flavorful and tender. If you like a little spice, this is the recipe to try. 

Ingredients: 

2 lbs chicken thighs

1/4 cup lime juice

1/4 cup olive oil

4 tablespoons cilantro

4 garlic cloves, chopped

1 tablespoons honey

2 teaspoons salt

3 teaspoons chili powder

Instructions: 

1) In a large sealable bowl or large ziplock bag, mix all the ingredients besides the chicken thighs. Add the chicken and make sure the meat is coated throughly.

2) Marinate for at least 2 hours.

3) When ready to cook, preheat oven to 425 degrees. Place thighs into baking dish skin side up.

4) Bake for 25 minutes, turn and bake for another 15 minutes. Turn again and finish cooking for 10 more minutes. Let rest for a few minutes before serving.
