Cheesy Zucchini

Cheesy Zucchini

This is an amazing side dish! The fresh zucchini comes through and tastes amazing with the cheese and spices. I’ve been trying to eat healthier, but dammit I love cheese (seriously I do, my husband jokes he lives with a giant mouse) so this was a nice go between. Easy, delicious and quick. The trifecta of awesome meals to make! 

Ingredients:

2 zucchinis, sliced into half moons

3 tablespoons chopped basil

2 tablespoons garlic and onion powder

1 teaspoon thyme

1/2 cup Mozzarella cheese, shredded

1/4 cup grated Parmesan

Instructions:

1) Preheat oven to 350 degrees.

2) Spray an 8×8 baking dish with Pam or another non-stick spray.

3) Slice the zucchini and mix in a bowl with the spices. Once well coated, pour into baking dish.

4) Top with both cheeses and bake for 30 minutes.
