Grilled Mahi Mahi with Corn and Avocado Salad

This is such a delicious way to prepare mahi mahi, it’s so easy and flavorful! This grills up nice and quick and goes perfectly with the salad. My husband and I had a kid free night a few weeks back and decided to stay home and have a night of cooking things that we always want to try but our children would never let us hear the end of for making it. I used frozen filets and just let them thaw till it was time to grill. You can also prep the salad ahead of time and put in the fridge till it’s time to eat. For something so easy, it tasted absolutely amazing! I practically inhaled the whole plate and wished I made more because it was that good!  [Read more…]

Tuna Casserole

I’ve been with my husband for awhile now and when we first moved in together he told me about one of his favorite dinners growing up was his mom’s tuna casserole. Once he told me that I had to contact my mother-in-law and get the recipe. I made it for his birthday that year and he was so happy to have this comfort food again that he stuffed himself! Now I keep this recipe on standby when I want to give him a little comfort food. His favorite way to eat this is with lots and lots of pepper so if you have a tuna fan in the house and need something easy to prep and quick to bake, this is your go to recipe!  [Read more…]

Honey Glazed Salmon with Garlic Butter Sauce-2

I’ll be honest. I was not always a seafood lover. But lately I’ve been trying to be healthier and that means eating more fish. Salmon was hard for me at first. It has one of those tastes that either you love or hate but this method makes it delicious! You don’t have to use a lot of this sauce to give the fish amazing flavor that doesn’t overwhelm the fish. This is a great recipe if you are trying to eat more fish but can’t get past the “fishy” taste. This eases you into it and makes you want to try more seafood.  [Read more…]

Beer Battered Fish Tacos with Avocado Jalapeño Sauce-2

Growing on the shoreline of Connecticut meant a lot of things but one of my favorite things is having access to really great seafood! When I was a kid, I didn’t eat a lot of seafood but as I’ve grown I’ve learned to appreciate it more and more. I know fish tacos are a California speciality for the most part but if you’re like me and can’t hop a plane at will, this recipe is a great option. The fish gets nice and crispy and the sauce gives it an awesome pop of tang!  [Read more…]

Prosciutto Wrapped Fish

This is a must try for any seafood fan or anyone you want to make a seafood fan! Prosciutto is one of those meats that gives everything an extra boost of flavor so you can imagine how delicious Prosciutto Wrapped Fish is. You can use really any fish for this as long as it’s a white, flaky kind. I used halibut but you can use tilapia.  [Read more…]

Baked Tilapia

Tilapia is a great fish to have if you are trying seafood for the first time. It doesn’t have an extreme fishy taste and there are so many options for it! This version is extremely easy but makes the fish taste decadent. It was flaky and tender, just perfect. This is also a great recipe to try if you are new to cooking seafood as the oven does everything, you don’t have to worry about it.  [Read more…]

Spicy Tuna Steak

Spicy Tuna Steak

I used to be really picky about seafood. Like I wouldn’t even eat it unless it was fried clams. Then I slowly started opening up to trying new things and now I’m getting better about trying different things. The only thing I will not eat is canned tuna, I do not like it at all but I saw a tuna steak on sale at the grocery store so I decided to try it and see if I like that. This came out delicious, not overly fishy tasting. It was a nice, mellow flavor. [Read more…]

Honey Lime Tilapia

Honey Lime Tilapia

I love this recipe so much. It’s so easy to prepare and cook. I usually buy a bag of frozen tilapia individually wrapped by the bag. This recipe works for both defrosted or fresh fish. This is something that every time you have this, the first bite is just amazing every time. The marinade complements the fish perfectly.  [Read more…]
