I love the combination of spinach and garlic! They are not only both super healthy for you but they also can make anything taste even better. These Tuscan Garlic Chicken Thighs are loaded with amazing flavor and are easy to make so it’s a perfect weeknight dinner for when you are super busy. I used boneless thighs for this recipe as I think it helped the chicken cook more thoroughly, but if you only have bone-in, just make sure they get cooked through before removing from the pan. Crispy Chicken Thighs

That’s why I love these Crispy Chicken Thighs! They cook low at first to not dry out the meat and they come out super juicy on the inside with that awesome crispy skin that’s full of flavor! Sheet Pan Honey Balsamic Chicken and Veggies
I love sheet pan meals. They are easy to prep, delicious and super easy to clean up! This Sheet Pan Honey Balsamic Chicken and Veggies is an awesome weeknight meal. I love using balsamic, one of my most popular recipes (Caprese Stuffed Chicken with Balsamic Glaze) featured it as a star ingredient and was the most popular post of 2017. The balsamic vinegar (see here) gives everything this amazing flavor and you will love how it mixes with the honey and garlic for a delicious marinade. All you need to do is make a marinade, cut up some veggies and trim the fat off your chicken and your prep is pretty much done. [Read more…]
Sheet Pan Lemon Chicken and Veggies
We all love having easy dinners that take low prep time. This Sheet Pan Lemon Chicken and Veggies is a great mid-week meal because it’s quick. From prep to table takes about 45 minutes and a majority of that is baking time! The breading on the chicken tastes awesome thanks to the lemon juice! The chicken was perfectly cooked and the garlic butter that coats the veggies made them even better. Creamy Chicken Alfredo
Ever since I was a kid, I’ve loved Fettuccine Alfredo. The pasta noodles mixed with that decadent sauce is one of those cheat meals that makes the next days workout worth it! This Creamy Chicken Alfredo is extra treadmill time worthy. I’ve added the chicken to this for some extra protein and I also use whole milk instead of cream to cut down a little on the calories! It doesn’t change the sauce consistency, it’s still nice and creamy! [Read more…]

Chicken Stuffing Bake
One of my husbands favorite things to eat is stuffing. He isn’t super picky but he’s always had a soft spot for the boxed Stove Top kind and he bought a whole bunch at BJ’s so it would last for awhile. One night I was going through the pantry and saw the bag and decided to try something new instead of the regular way. My husband got home from work, made himself a plate and immediately went for seconds! My favorite part of this recipe is that is already involves a lot of staples that people have in their home, which makes it an easy choice for a dinner, especially since the prep work is so low it barely feels like cooking. Cajun Stuffed Chicken
If there are two vegetables that I love and use frequently, it’s asparagus and zucchini. It was to the point where I just always had extra on me and needed to use it up. So this creation of Cajun Stuffed Chicken happened. I made it and was given complements about how delicious it was. The veggies mixed perfectly with the Cajun seasoning for an awesome mix of flavors. If you want to make something that doesn’t have any added extras to add up the calorie count then this is the way to go! [Read more…]
Primavera Chicken
As much as I create some decadent recipes, sometimes you have to even it out and eat healthy. I know that’s hard so that’s why I love this Primavera Chicken for many reasons, the biggest being that it’s really easy to make. It’s also a great meal during the week since it’s healthy and helps you get your protein and veggie quotas without keeping you trapped in a kitchen. It’s also seasoned well and topped with cheese to give it even more flavor! I loved it as the mix of tomatoes, pepper and zucchini really helped the chicken taste great. [Read more…]
