Crockpot Chicken Thighs and Potatoes

Crockpot Chicken Thighs and Potatoes

I love super easy recipes and this one for Crockpot Chicken Thighs and Potatoes couldn’t be better. The crockpot does most of the work and the sear on the chicken thighs before you put them in makes the chicken get an awesome flavor that matches perfectly with the garlicky potatoes. This is a great option for a mid-week meal. You can have a delicious dinner waiting for you when you get home! Who doesn’t love that kind of ease?  Continue reading “Crockpot Chicken Thighs and Potatoes”

Hearty Beef Chili

There are some foods that can go with anything. Chili is a great dish because you can always mix it up however you want! You can have chicken, vegetarian, etc. This Hearty Beef Chili is a great version because you can prep it easily and let it cook all day while you do other stuff and it will be ready to chow down when you are! If you want to let this simmer on the stove instead, just follow the instructions and put it in a soup pot on low to cook nice and thick for you. I prefer to top with cheddar cheese and sour cream but you can use whatever you want; jalapeños, use a piece of Honey Cornbread for dipping, anything goes!  Continue reading “Hearty Beef Chili”

Crockpot Baked Potatoes

Vegetarian

I love baked potatoes! Especially Crockpot Baked Potatoes! They are an easy side dish that can be filled with anything! Sometimes though, they can hold up your dinner if they don’t cook long enough in the oven. If you want to take that worry away, you can make them right in your crockpot! They come out soft and delicious and you don’t have to worry about timing them around your main course. You let them slow cook away and they will be ready just in time. They will also save you on oven space since these will be cooked elsewhere. All you need to get ready is all of your favorite toppings, you can watch the butter and cheese melt right in and your ready to eat!  Continue reading “Crockpot Baked Potatoes”

Pineapple Salsa Chicken

Pineapple Salsa Chicken

I love coming up with different ways to make chicken. It can get boring if you have a chicken heavy diet without variety to there are tons of recipes here that can get you out of that rut. Like Pineapple Salsa Chicken! Pineapple in salsa is a great combination, the sweetness of the fruit helps counteract the spiciness of the salsa so it makes for a really delicious mix of flavors! This meal gets slow cooked in the crockpot so you can prep it and then get other things done while this simmers away for you. If you can’t handle a lot of spice you can take out the jalapeño or the chili powder to tone down the heat for you.  Continue reading “Pineapple Salsa Chicken”
