Bacon Wrapped Pierogies

I love pierogies. There is something about that mix of cheese and potatoes that just makes me happy. Now add some sweetened bacon into the mix and you are in taste bud heaven! I used some cheese, potato and sour cream pierogies for this recipe and I think it was perfect with the brown sugar sprinkled bacon. I love making asparagus as it is so easy to prepare and use for so much. I usually make Parmesan Roasted Asparagus and it always comes out perfect but asparagus is one of my husband’s favorite sides and when he came home from the store with a big batch of fresh asparagus and some lemons, I knew exactly what he was looking for. Maple Baked Bacon

Bacon is that food that if you love it, it’s very hard to screw up. I had a bunch of bacon that I wanted to do something fun with and once I saw that bottle of maple syrup, I knew I had found my answer. The syrup gives a nice coating to the bacon and it has an amazing sweet and salty mix that you will love at first bite. Not to mention it saves you time on cleanup and it saves really well so you can make a big batch and keep it on hand for when you need it. I love sheet pan meals. They are easy to prep, delicious and super easy to clean up! This Sheet Pan Honey Balsamic Chicken and Veggies is an awesome weeknight meal. I love using balsamic, one of my most popular recipes (Caprese Stuffed Chicken with Balsamic Glaze) featured it as a star ingredient and was the most popular post of 2017. The balsamic vinegar (see here) gives everything this amazing flavor and you will love how it mixes with the honey and garlic for a delicious marinade. Brussels Sprouts with a Creamy Sriracha Dipping Sauce

I was recently contacted by Tracey Medeiros, an amazing cook and author of Dishing Up Vermont and The Connecticut Farm Table Cookbook, who told me about a great local event coming up. The Aldrich Contemporary Art Museum in Ridgefield, CT with be debuting a new lifestyle event series called Contemporary Social on Friday, March 2, 2018. It’s a festive evening that celebrates culture, cuisine and craft. Tracey will be featured there doing a book signing and cookbook food samples. She will also be discussing her latest projects and the farm to table and non-GMO movements.

In honor of the event, I’m featuring a recipe from Tracey, Brussels Sprouts with a Creamy Sriracha Dipping Sauce that was quoted as “Brussels sprouts with creamy sriracha dipping sauce will convert even purported sprouts naysayers.” by Maria Buteux Reade from Edible Green Mountains Magazine. Taco Stuffed Potatoes

It’s officially 2018! I hope you rang in the New Year under happy circumstances. I don’t know about where you are but it is COLD here. Like my car is a block of ice and makes me want to crawl into bed all day kind of cold. So I’m craving comfort foods that have all my favorites and a little bit of spice to warm me up. That’s why these Taco Stuffed Potatoes are a great option for these bitter winter days.
