Now that we are in the full swing of summer, it’s time for easy recipes that can be made on the grill. This recipe for Cast Iron Asparagus and Peppers is perfect because it can be made on the grill or in the oven. It’s also very good for you, veggies and olive oil with just a bit of seasoning will give you a ton of flavor that you will love! I used my 10 inch cast iron skillet, see here. I love using this because it works just as well as my 12 inch but can handle stuff like this with ease. This can cook while you have your main course cooking and you don’t need to worry about it. The cast iron helps everything roast evenly. Cast Iron Asparagus and Peppers is a perfect easy summer side for your hot and relaxing nights.
Ingredients:
1/2 lb asparagus, end trimmed
1 yellow pepper
1 orange or red pepper
2 tablespoons olive oil
Salt and pepper to taste
1 tablespoon garlic powder
Instructions:
1) For oven or grill, set temp to 400 degrees F. In the cast iron, add trimmed asparagus, drizzle with 1 tablespoon olive oil, some salt and pepper and 1/2 tablespoon garlic powder. Toss to mix well and cook for 20 minutes. If using the grill, make sure that the cast iron is on indirect heat.
2) Add the peppers and the remainder of the ingredients, toss to mix and cook for another 15 minutes until peppers are softened and asparagus is tender. Serve immediately.
