Caramelized Onion and Cheddar Grilled Cheese

Caramelized Onion and Cheddar Grilled Cheese

Sandwiches are a staple but there is something about a really great sandwich that makes your whole day better. A classic grilled cheese is always good but the mix of caramelized onions, BBQ sauce and cheddar makes this sandwich something to absolutely love and want over and over again! I use mayo as a spread when I make grilled cheese because they make amazingly melty sandwiches, you can read more about that here.

Ingredients:

3 tablespoon olive oil

1/2 Vidalia onion, thinly sliced

Salt and pepper

1 garlic clove, chopped

4 slices whole grain bread

2 tablespoons mayo

1/4 cup BBQ sauce

4 slices sharp cheddar cheese

Instructions: 

1) In a large skillet, heat olive oil on medium low heat. Add onions, salt and pepper. Stir to coat and cover skillet. Cook onions until softened and golden, about 20-25 minutes. Add garlic, cook for one more minute then set aside in a bowl.

2) Wipe out skillet and turn up the heat to medium. Spread mayo on one side of each slice of bread. Add two slices, mayo side down on the skillet and top with a slice of cheese each.

3) Add BBQ sauce to onions and mix well. Spoon some onto the cheese and put the sandwich together. Continue cooking until both sides are golden brown. Remove from skillet, slice and serve.
