Caprese Stuffed Chicken with Balsamic Glaze

I love this recipe, sometimes it just takes a new ingredient to make a dish explode into something better! This Caprese Stuffed Chicken with Balsamic Glaze is packed with flavor both inside and out and the perfect addition to any menu! 

Ingredients: 

4 boneless chicken breasts

1 tablespoon basil

1 tablespoon oregano

Salt and pepper

2 tablespoons olive oil

2 cloves garlic, chopped

1 cup grape tomatoes, halved

1/2 cup mozzarella, shredded or sliced

1 cup balsamic vinegar

1/2 cup brown sugar

Ingredients: 

1) Preheat oven to 400 degrees. Season the chicken breasts with the half the basil, plus the oregano, salt and pepper. Butterfly the chicken and season the inside with the remaining basil, the mozzarella and tomatoes. Use toothpicks to keep the chicken closed.

2) Add garlic to skillet and cook till fragrant, about 1 minute. Add the balsamic vinegar and brown sugar, stir to combine and simmer till glaze thickens.

3) While the glaze is thickening, heat the olive oil in an oven safe pan on medium high heat. Sear both sides of the chicken until golden brown, 4 or 5 minutes on each side. Move chicken to a plate and set aside.

4) Return the chicken to the pan, turning in the glaze to evenly coat. Add any extra tomatoes that didn’t fit in the chicken in the pan. Bake for 35-40 minutes until chicken is cooked through. Remove toothpicks and serve immediately.
