I have a pretty well stocked spice cabinet and some get used way more than others. I had a bottle of Cajun seasoning from a recipe that I noticed was getting pretty lonely so I wanted to incorporate it into something delicious. That something was Cajun Chicken Pasta! I used the seasoning on the chicken and it was incredible! Full of flavor but not overpowering or too spicy! Ingredients:
2 boneless, skinless chicken breasts
2Â tablespoons olive oil
2 tablespoon cajun seasoning (see here)
1 box (1 lb) penne pasta
3 tablespoons butter
3 cloves garlic, chopped
1 cup whole milk or heavy cream
1/4 cup grated Parmesan
Salt and pepper
8 grape tomatoes, quartered
Instructions:Â
1) In a large cast iron pan, heat olive oil over medium high heat. Coat chicken with Cajun seasoning and place into pan. Cook on both sides until done, about 5-7 minutes on each side. Remove from pan and let rest for a minute then cut into bite size pieces.
2) Boil water for pasta, add salt and cook penne to package instructions. Drain and set aside.
3) Wipe out skillet, lower to medium heat and melt butter. Add garlic and cook till fragrant. Slowly whisk in milk or heavy cream. Cook while whisking until slightly thickened. Stir in Parmesan and mix well. Season with salt and pepper.
4) Stir in pasta and incorporate well with the sauce. Top with chicken and tomatoes and serve.

This looks absolutely tasty. Thank you for sharing the recipe and it looks pretty easy to follow. I am not a fan of the pene and it’s the only thing I would change.
You can absolutely replace it with a pasta you prefer!

This Cajun Pasta looks so appetizing. Now I am hungry. It looks like something I would try and seems very easy to make. Anything that means less time in the kitchen for me is always a go. I take your word that it is not too spicy! I bet it tasted as good as it looks 🙂
