It’s a great start but the amount of Cajun seasoning is way too much. Most, if not all Cajun seasonings have a lot of salt and it overpowers the amazing creamy, cheese flavor. Not to mention the salt in cheddar cheese. I have modified this recipe as follows:
2 tbls flour
2 tbls butter
1.5 cups milk
3/4 cup cheddar cheese
1/2 tsp Cajun seasoning
1/2 tsp cayenne pepper
1/4 tsp black pepper
We tend to like our cheese sauce a bit spicy and it works very well when I serve it with blackened fish.
