We are about halfway through February and while I’m sure your sights are set on Valentine’s Day, did you also know that the month of February is National Hot Breakfast Month? I don’t know about you, but I’m always down for a hot breakfast but during a busy week it’s hard to find the time to get it done. However, breakfast for dinner is always a good idea.
I’m like Ron Swanson in that there really isn’t a bad time for breakfast food and these Breakfast Tacos prove that. They have all of your favorites stuffed inside a delicious pancake that makes every bite taste amazing! I used the new Krusteaz Protein Buttermilk Pancake Mix to add an extra bump of protein to my dinner. Then I made my favorite breakfast spread and stuffed it right inside!
Ingredients:
5-7 Krusteaz Buttermilk Pancakes
10 slices bacon
4 eggs, scrambled
1/4 maple syrup
Instructions:
1) Cook bacon till crisp and set aside to cool. Prepare pancakes according to package instructions and pile on a plate till cool enough to handle. Scramble eggs in a buttered skillet to preferred consistency.
2) Take a buttermilk pancake and start layering bacon and eggs. Don’t add too much or the pancake won’t close over it. Drizzle with maple syrup, close and serve.
