We are in the thick of baseball season and in foodie news, the Boston Red Sox have named Nellie’s Free Range Eggs the official egg of the team. Since the beginning of the partnership, all egg dishes served at Fenway Park are made with Nellie’s eggs. In honor of this partnership, here is a fun recipe that is perfect to fuel up for the day, Breakfast Pizza!
This breakfast pizza bakes quick, lets you customize and uses delicious and nutrient-dense Nellie’s eggs as the star. Eggs are the perfect protein punch to fuel your day. Nellie’s eggs are Certified Humane because the hens have plenty of room to frolic and eat a more varied diet resulting in healthier hens and healthier eggs. You can see the difference in the bright golden color.

Ingredients:
2 whole wheat pitas
1 tablespoon olive oil
1/2 cup mozzarella cheese, shredded
1 tablespoon garlic powder
1 tablespoon oregano
1/2 cup frozen spinach, thawed and squeezed dry
4 pieces of bacon, cooked crisp and crumbled
2 Nellie’s Free Range Eggs
Instructions:
1) Heat broiler to 450 degrees.
2) Place a pita on a baking sheet. Brush with 1/2 tablespoon of olive oil. Sprinkle 1/4 cup mozzarella cheese and sprinkle garlic powder and oregano.
3) Take some spinach and bacon to make a circle around the middle of the pita. Crack an egg in the middle and place under the broiler for 7-10 minutes until the egg whites are set and the egg is cooked to your liking.
