Black Beans and Rice

A simple side dish can help make your nights much easier. What’s great about this Black Beans and Rice is that it’s versatile and can go with anything! It’s perfect for a side dish or as a filling for burritos! All you need is 30 minutes and you can make enough to last for the week and you don’t need to worry about sides to go with dinner. This is a great option to go with some 5 Ingredient Baked Enchiladas or Smothered Chicken Burritos. But honestly, these are so good that you can eat them all on their own! 

Ingredients: 

1 tablespoon olive oil

1 tablespoon onion powder

1 clove garlic, chopped

1 cup white rice, uncooked

2 cups chicken broth

1/2 teaspoon cumin

1 can black beans, drained and rinsed (16 oz)

Salt and pepper

Instructions: 

1) In a medium saucepan, heat olive oil over medium high heat. Add garlic and onion powder and stir for one minute. Add rice and stir for another minute.

2) Add broth, salt, pepper and cumin. Stir and bring to a boil. Cover, reduce to low and simmer for 20 minutes.

3) Remove lid, add beans and cover again. Remove from heat and let sit for 3 minutes. Stir again and serve.
