Bacon and Cheese Potatoes

Who doesn’t love potatoes? This recipe is extra amazing because it’s full of flavor and you can make it all in one pan. I lined my baking sheet with foil and I didn’t even have to wash anything. I don’t have a dishwasher so I’m always down for less dishes to wash. What I love about this is that you can make them as a side for your main dish or you can just eat them as a meal themselves. 

I used russet potatoes for this but if you have some leftover red potatoes and want to use them, you can.

Ingredients: 

6 pieces bacon

4 russet potatoes, peeled and chopped to 1/2 inch pieces

1 tablespoon salt and pepper

1 tablespoon garlic powder

1 tablespoon onion powder

1/2 cup cheddar, shredded

Instructions: 

1) Line baking sheet with foil and lay the bacon across. Place into cold oven and preheat to 400 degrees. Set timer for 20 minutes and check the bacon. If it’s as crispy as you like, remove. If not, cook it on 3 minute intervals until it’s at your desired crisp level.

2) Place bacon on paper towels to drain. Do not get rid of the bacon grease. Add the potatoes to the baking sheet and mix with the grease. Add salt, pepper, garlic powder and onion powder. Spread on sheet and bake for 20 minutes. Stir and bake for another 20 minutes. Stir again.

3) Chop bacon and sprinkle over potatoes along with the cheese. Bake for another 3 minutes till cheese melts.
