Apple Cider Pie

This time of year means many things: colder weather, fall foliage and a lot more apples and pumpkins! Apple cider is something that tastes the best in the fall and is the perfect ingredient for this pie! Simmering the apples in the cider gives it amazing flavor. I used store bought crust for this as a time saver but if you prefer homemade, go for it! This recipe can work with both kinds of crust. This is going to be the star of your Thanksgiving table!

Ingredients:

1 package of two pie crusts

1.5 cups apple cider plus 2 tablespoons extra

6 cups of apples, peeled and cut into 1 inch chunks

1/2 cup sugar

1 tablespoon cornstarch

1/4 teaspoon salt

2 tablespoons butter

1/3 cup brown sugar plus 1 tablespoon extra

1/2 teaspoon cinnamon

Instructions:

1) Preheat oven to 400 degrees.

2) Put apples and the 1.5 cups of cider into a skillet. Cover and cook for 10 minutes on medium heat until apples are softened. Remove the apples and save for later.

3) Mix sugar, cornstarch and salt. Sift into the cider in the skillet and whisk until mixed. Cook over medium heat until thickened, about 7-8 minutes.

4) Add butter and stir till melted. Add brown sugar and mix till smooth. Return apples to the skillet and remove from heat. Let cool for 5 minutes.

5) Roll one pie crust into a pie tin. Take the 2 tablespoons of apple cider and brush the crust all over. Take the tablespoon of brown sugar and the cinnamon and sprinkle over the bottom.

6) Take a pizza cutter and slice the other crust into strips.

7) Add apple mix to pie tin and begin using the crust strips to make a lattice crust. If you are unfamiliar, here’s a great tutorial.

8) Bake for 40 minutes until crust is golden brown. You can top with vanilla ice cream or whipped cream and enjoy!
