Three Cheese Potatoes Au Gratin

Vegetarian

Sometimes when you think of a recipe, the name makes it sound like it could be harder than it is. These Three Cheese Potatoes Au Gratin take a little bit of prep but are so delicious and decadent that you won’t even care. The cheese sauce coats the potatoes perfectly, making them nice and tender. You can use any cheese you would like but I would recommend a sharp cheddar to complement it or some Jack cheddar to give it an awesome spicy flavor!

Ingredients:

4-5 russet potatoes, peeled and sliced

1 cup milk

1 cup mozzarella cheese, shredded

1 cup cheddar cheese, shredded (plus 1/2 cup extra for topping)

1/2 cup Parmesan cheese, grated

2 tablespoons butter

2 tablespoons flour

1/2 tablespoon onion powder

1/2 tablespoon garlic powder

Salt and pepper

Instructions:

1) Preheat oven to 375 degrees.

2) In a large saucepan, melt the butter and whisk in the flour till combined and thick. Add milk. Let simmer until thickened. Slowly add cheeses, 1/2 cup at a time, until melted together. Add onion powder, garlic powder, salt and pepper. Remove from heat.

3) Place a layer of potatoes in a square baking dish. Drizzle some cheese sauce on top. You don’t need to cover every piece, as the sauce will spread during the cooking process. Repeat until you have two more layers of potatoes.

4) Sprinkle the extra cheddar on top. Bake for 50 minutes until top is browned and crispy. Serve immediately.
