Spicy Chicken Cups

It’s backyard cookout season and Labor Day is right around the corner. I usually make my Taco Cupcakes, which are a favorite, but sometimes people want a little lighter with their food. The tacos are great but, not the healthiest thing. So I decided to make some swaps and cut down on the calories a bit. I switched out the beef with chicken and took out the queso completely. I also removed the black beans but those are an ingredient you can add in while you cook the chicken for some extra fiber! Lemon Roasted Asparagus

I love making asparagus as it is so easy to prepare and use for so much. I usually make Parmesan Roasted Asparagus and it always comes out perfect but asparagus is one of my husband’s favorite sides and when he came home from the store with a big batch of fresh asparagus and some lemons, I knew exactly what he was looking for. Lemon is a great summer fruit because it gives a freshness to everything and it goes perfectly with garlic so you know that this is a match. Chicken and Zucchini Stir Fry

Summer means zucchini season. Whenever I go to the grocery store, they are practically giving them away because there are so many being grown. If you grow your own, you get to the point where you are doing everything you can to use them up. From Zucchini Bread to Zucchini Chips, you use what you can. Chicken Primavera Pasta

I am a big fan of rich, creamy sauces on my pasta and salads. Alfredo, ranch, blue cheese, caesar….I’m all about it. But sometimes you want something light and good for you. This recipe is loaded with healthy veggies and a light coating of cheese that doesn’t overpower the dish, you could even skip it completely if you wanted to. Creamy Chicken and Rice Soup

This is the winter that will never end, well it seems like it in the northeast anyway. What I love about this soup is that it’s full of flavor and healthy ingredients. We have chicken, carrots, celery and smells amazing! The rice also thickens it up really nice to full your belly and keep you warm. This soup is perfect for any time of year if you are looking for something easy and delicious.
