Chicken Sausage Jambalaya

Now I will start this with a disclaimer before people go crazy…..no this isn’t authentic Cajun southern Jambalaya. But it’s pretty close and very delicious. It also uses chicken sausage to cut down on fat. I got this Johnsonville chicken sausage on sale at the store and wanted to do something really fun and flavorful that accompanied the flavors already in the sausage. Double Bean and Beef Enchiladas

Fried Lasagna

Autumn in New England means a lot of things but for anyone around here one of the first things that pops into our heads is The Big E! If you are unfamiliar, it’s like the Ohio State Fair or something else like that magnitude. Awesome rides, a ton of stuff to do and, of course, amazing food! The fried food craze is big there and while I’m not brave enough to try to make some of those ideas at home (fried Coca-Cola?), I knew that Fried Lasagna was something I could handle without a kitchen fire.
