I think it’s safe to say that I love tacos! Between my Taco Cupcakes to my Beer Battered Fish Tacos, it’s definitely something that is eaten regularly in this house. This recipe for Taco Zucchini is a great way to get your taco fix while still getting some veggies into you. Jalapeños seem to be everywhere lately, and for good reason. They can be used for many things and poppers are the classic go-to dish for many. Now I have had some delicious poppers and decided to liven up some chicken with the mix! I made this with salsa instead of cream cheese to lighten the calorie load a bit. If you want to lessen the spice punch a little bit you can substitute the pepper jack cheese with some mozzarella or cheddar. This is easy to put together and the perfect dish for someone who loves a lot of spice in their life! I served this with a side of Roasted Red Potatoes!
