Now I will start this with a disclaimer before people go crazy…..no this isn’t authentic Cajun southern Jambalaya. But it’s pretty close and very delicious. It also uses chicken sausage to cut down on fat. I got this Johnsonville chicken sausage on sale at the store and wanted to do something really fun and flavorful that accompanied the flavors already in the sausage. Honey Balsamic Pulled Pork

Holy cow the sauce on this Honey Balsamic Pulled Pork is so delicious! It’s thick and syrupy and gives the pork so much flavor! The sauce complimented the pork well and made me want to savor every bite! If you have trouble finding balsamic vinegar, I recommend this version here. It’s a quality brand without breaking the bank. Who doesn’t love an easy cookie recipe? You know what happens when you get the craving and then you realize you need to dig out all the ingredients, if you have them, and you know this will take awhile. But these cookies are different. Not only are they easy to make and bake, they are also only four ingredients! Seriously. Just four, and they are all things they you have in your kitchen anyway so you can always get your cookie craving on! My favorite thing about this recipe is that they are perfect for drop cookies! Homemade Sun Dried Tomatoes

Sun dried tomatoes are a heavy hitter in the summer. There are tons of recipes out for them right now and tons of ways to enjoy them. But sometimes you have trouble finding them or don’t want to spend the money on a jar at the store. The good news is you can make your own version at home! These come out delicious and I was able to get them to the exact dryness I wanted. Cilantro Lime Cauliflower Rice

As delicious as carbs are, sometimes you need to cut them out. I’m all for moderation so I would never tell you to give up those amazing carbs but if you are looking for a way to get away from the carbs for awhile then this recipe for Cilantro Lime Cauliflower Rice is perfect. I used a bag of pre-made rice that I bought. You can find already made rice here. However, if you want to make your own it is very easy. Just take one large cauliflower and break it into florets. Rinse them well and pat dry. Then place them into a food processor and pulse until it’s the consistency of rice. Then you are ready to go!
