Lemon Roasted Asparagus

Vegetarian

I love making asparagus as it is so easy to prepare and use for so much. I usually make Parmesan Roasted Asparagus and it always comes out perfect but asparagus is one of my husband’s favorite sides and when he came home from the store with a big batch of fresh asparagus and some lemons, I knew exactly what he was looking for. Lemon is a great summer fruit because it gives a freshness to everything and it goes perfectly with garlic so you know that this is a match. This is a great summer side for any meal.  Continue reading “Lemon Roasted Asparagus”

Chicken and Zucchini Stir Fry

Summer means zucchini season. Whenever I go to the grocery store, they are practically giving them away because there are so many being grown. If you grow your own, you get to the point where you are doing everything you can to use them up. From Zucchini Bread to Zucchini Chips, you use what you can. What I love about this recipe for Chicken and Zucchini Stir Fry is that it is super easy to make, it only takes one skillet, it’s also a perfect, healthy weeknight meal!  Continue reading “Chicken and Zucchini Stir Fry”

Caramelized Pork

I scored at the grocery store and ended up with a ton of pork butt for a great price. Now I had to figure out what to do with it. I could do the classic Pulled Pork but I wanted to switch it up. I had seen caramelized pork with a more Asian twist but as I am not super knowledgeable in Asian themed cooking, I mixed it up and tried it out my way. I didn’t have fish sauce or coconut water but I used some chili powder and garlic to give the meat some flavor to blend with the sweet caramel. These came out tender with a nice sticky coating.  Continue reading “Caramelized Pork”

Easy Alfredo Sauce

Alfredo sauce is a classic. Who doesn’t drool over a big ole plate of fettuccine alfredo? This Easy Alfredo Sauce is quick to make and only requires a few ingredients so you don’t need to make a grocery run. I like using the skillet to make this as I think it cooks more evenly but you can absolutely use a saucepan also. The most important thing to remember is that your cooking temperature is very important in this. Butter has a high fat content and if the heat is too high, it will separate from the milk and looks very watery. You want a nice, creamy thick sauce that will coat your pasta so if you notice a greasy looking mix, lower the heat and it should mix back together again.  Continue reading “Easy Alfredo Sauce”

Honey Roasted Chicken Thighs with Veggies

I’ve been using a lot of chicken thighs lately as they are almost always on sale at the grocery store. I can do my staple recipe, Honey Garlic Baked Chicken Thighs, but sometimes I like something a little different. This recipe for Honey Roasted Chicken Thighs and Veggies comes out perfectly! The sauce makes everything taste incredible. The sweet potatoes and asparagus worked wonderfully for me but you can use regular potatoes or green beans if you want to try something different.  Continue reading “Honey Roasted Chicken Thighs with Veggies”
