Three Cheese Potatoes Au Gratin

Vegetarian

Sometimes when you think of a recipe, the name makes it sound like it could be harder than it is. These Three Cheese Potatoes Au Gratin take a little bit of prep but are so delicious and decadent that you won’t even care. The cheese sauce coats the potatoes perfectly, making them nice and tender. You can use any cheese you would like but I would recommend a sharp cheddar to complement it or some Jack cheddar to give it an awesome spicy flavor!  Continue reading “Three Cheese Potatoes Au Gratin”

Chicken Sausage and Roasted Veggies

The newest thing at our house is chicken sausage. It’s delicious and full of flavor but not a lot of fat like regular sausage does. I love using Al Fresco brand just because they have a ton of different options but you can use any kind that you like. What I really loved about this recipe was that it’s great for meal planning. You can make a whole batch worth on the weekend and have lunch for every day of the week! This reheats well and doesn’t lose any flavor as a leftover so definitely add this to your meal plan menu!  Continue reading “Chicken Sausage and Roasted Veggies”

Crispy Parmesan Chickpeas

crispy parmesan chickpeas

Snacking is hard when you’re trying to eat healthy, which is why these Crispy Parmesan Chickpeas are an awesome way to get a crunchy snack without the grease or calories! These are full of flavor and give you that crunch that you want! These are great if you like something to munch on while watching TV and worry about overindulging. You can snack away and you’ll be OK! The most important thing to remember for this is to get the chickpeas as dry as you can. The dryer they are, the crunchier they will be!  Continue reading “Crispy Parmesan Chickpeas”

Hearty Beef Chili

There are some foods that can go with anything. Chili is a great dish because you can always mix it up however you want! You can have chicken, vegetarian, etc. This Hearty Beef Chili is a great version because you can prep it easily and let it cook all day while you do other stuff and it will be ready to chow down when you are! If you want to let this simmer on the stove instead, just follow the instructions and put it in a soup pot on low to cook nice and thick for you. I prefer to top with cheddar cheese and sour cream but you can use whatever you want; jalapeños, use a piece of Honey Cornbread for dipping, anything goes!  Continue reading “Hearty Beef Chili”

Crockpot Baked Potatoes

Vegetarian

I love baked potatoes! Especially Crockpot Baked Potatoes! They are an easy side dish that can be filled with anything! Sometimes though, they can hold up your dinner if they don’t cook long enough in the oven. If you want to take that worry away, you can make them right in your crockpot! They come out soft and delicious and you don’t have to worry about timing them around your main course. You let them slow cook away and they will be ready just in time. They will also save you on oven space since these will be cooked elsewhere. All you need to get ready is all of your favorite toppings, you can watch the butter and cheese melt right in and your ready to eat!  Continue reading “Crockpot Baked Potatoes”
