I love sweet potatoes! They are just a delicious way to eat healthy and you can do a lot with them. This is a recipe for a classic Sweet Potato Casserole. This has lots of sweetness from the brown sugar and a little spice with the nutmeg and of course, you can’t skip the marshmallows on top! There is nothing like a crunchy marshmallow! Ingredients:
3 lbs sweet potatoes, peeled and cut into chunks
1 egg
1/4 cup butter (1/2 stick), melted
1/4 cup milk
1/2 cup brown sugar, halved
1 tablespoon nutmeg, halved
1 tablespoon cinnamon, halved
2 cups mini marshmallows
Instructions:
1) Preheat oven to 350 degrees. Fill a pot with water and bring to a boil on high heat. Add sweet potatoes and boil for 20 minutes. Pierce a few pieces with a fork to make sure they are tender before draining. Drain and mash in the pot.
2) Coat a baking pan with spray. Add egg, butter, milk and mash. In a bowl, mix half the brown sugar, nutmeg and cinnamon and set aside. Add remaining spices to potato mash. Mix well. Pour into baking dish and spread over evenly.
3) Sprinkle the brown sugar mix over the top and bake for 25 minutes. Add marshmallows over the top and place under the broiler until browned. Watch carefully! They brown up very quickly.
