I’m a huge fan of easy to put together meals with things you have around the house so this Skillet Sausage and Broccoli Pasta is a great option. I usually always have chicken broth, pasta and Parmesan on hand so when my husband picked up a bunch of sausage home I knew I had to find something tasty to do with it. If you like to buy your veggies in bulk and always have some frozen broccoli around, this recipe is perfect. This can also work with spinach if you have that on hand. This is easy to put together and a great weeknight meal for a group of hungry people. This also reheats well so it’s a good leftover option for next day lunches! Ingredients:
1 lb sweet Italian sausage
1 package broccoli florets
4 cups chicken broth
15 oz elbow macaroni
3/4 cup grated Parmesan cheese
Salt and pepper
Instructions:
1) In a large skillet, brown sausage. While sausage is cooking, cut broccoli into bite size pieces. Drain excess oil from sausage and add chicken broth.
2) Bring to a boil and add pasta. Cook till pasta is al dente according to package instructions. When there is 3 minutes remaining to cook, add the broccoli to skillet.
3) Remove from heat and add salt, pepper and Parmesan and mix well to fully combine.
