I love coming up with different ways to make chicken. It can get boring if you have a chicken heavy diet without variety to there are tons of recipes here that can get you out of that rut. Like Pineapple Salsa Chicken! Pineapple in salsa is a great combination, the sweetness of the fruit helps counteract the spiciness of the salsa so it makes for a really delicious mix of flavors! This meal gets slow cooked in the crockpot so you can prep it and then get other things done while this simmers away for you. If you can’t handle a lot of spice you can take out the jalapeño or the chili powder to tone down the heat for you.
Ingredients:
3 boneless, skinless chicken breasts
2 cups chopped pineapple
1/2 cup diced white onion
1 medium jalapeno, chopped
1 15 oz can diced tomatoes
3 tablespoons chopped cilantro
1 garlic clove, chopped
Salt and pepper
1 tablespoon chili powder
Instructions:
1) In a large bowl, mix pineapple, onion, jalapeño, tomatoes, cilantro, garlic, salt, pepper and chili powder.
2) Spray your crockpot with cooking spray and add chicken. Pour pineapple mix all over the chicken.
3) Cover and cook on high for 3-4 hours or low for 5-6 hours. Serve immediately.
