PepperJack Bacon Chicken

Now that it’s the start of a new year, I’m seeing new diets all over the place. The big one that’s getting a lot of attention is the Keto diet. If you aren’t familiar, it’s basically going very low carb and going high protein and increasing your fat intake to make you full easier. Now some people are doing this for strictly health reasons and some are doing it because it does help you drop pounds.

Luckily, there are a lot of options to liven up your meal plan every night. This PepperJack Bacon Chicken is low carb and delicious thanks to that kick of extra that the cheese brings to it. If you are planning your Keto meal plan, add this recipe to your shopping list! 

Ingredients: 

6 pieces of bacon

3 large boneless, skinless chicken breasts

Salt and pepper

3 slices pepper jack cheese

Instructions: 

1) Preheat oven to 350 degrees. In a cast iron skillet, fry up the bacon slices until crispy, set aside to cool and wipe out the skillet. Once bacon is cooled, crumble.

2) Season the chicken with the salt, pepper and garlic powder. Place into skillet and put into oven. Bake for 45 minutes. Top each chicken piece with some cheese and bacon pieces. Bake for an additional 5 minutes. Serve immediately.
