I love using eggplant to cook. It has amazing flavor and can be used in many different ways. This recipe for Eggplant Cacciatore is incredibly easy and delicious. I state to use tomato sauce in the recipe, I used my homemade sauce (see here) and I felt it gave the recipe even more flavor. If there is a specific sauce that you like, feel free to use it. Spicy Chicken Cups

It’s backyard cookout season and Labor Day is right around the corner. I usually make my Taco Cupcakes, which are a favorite, but sometimes people want a little lighter with their food. The tacos are great but, not the healthiest thing. So I decided to make some swaps and cut down on the calories a bit. I switched out the beef with chicken and took out the queso completely. I also removed the black beans but those are an ingredient you can add in while you cook the chicken for some extra fiber! Spinach Ricotta Penne

I love how creamy and rich the sauce on this recipe came out. Not only was is delicious but it clung to the penne perfectly so every bite gives you flavor. This Spinach Ricotta Penne is a perfect comfort food recipe when you want some flavor but still get your vegetables. I love using spinach in recipes because it’s so versatile and this dish is no different.
