Happy New Year! Hope you all had a wonderful holiday season. Starting 2019 with something new. Saw this recipe for pork and vegetables lumpia and wanted to try it out for the longest time so I finally found the time to do it. Absolutely love them! The crispy crunch of the outside goes perfectly with the flavorful filling and gives you that satisfying, hit the spot feeling you love after a good dish. They were such a hit that my picky eater child raved and said he wanted more!

Fried Eggplant Parmesan

I love how this Fried Eggplant Parmesan comes out. It takes a little bit more prep work but it really makes for a delicious meal. The breaded and fried eggplant really helps bring out the flavor and topped with some homemade marinara sauce (see here) and you are looking at heaven on a plate!

Caprese Baked Chicken

I love anything caprese! Something about the mix of tomatoes, fresh mozzarella and balsamic vinegar makes for a truly flavorful, amazing dish. This recipe came out perfect in that the vinegar added just the right amount of extra flavor and the chicken cooked up nice and even.
