Grilled Mahi Mahi with Corn and Avocado Salad

This is such a delicious way to prepare mahi mahi, it’s so easy and flavorful! This grills up nice and quick and goes perfectly with the salad. My husband and I had a kid free night a few weeks back and decided to stay home and have a night of cooking things that we always want to try but our children would never let us hear the end of for making it. I used frozen filets and just let them thaw till it was time to grill. You can also prep the salad ahead of time and put in the fridge till it’s time to eat. For something so easy, it tasted absolutely amazing! One of the best things about summer is the ability to put your grill to good use! Living in the northeast, the grill gets retired for a portion of the year so we really take advantage when the opportunity arises! These wings are a perfect thing for a grill night. The marinade makes the wings moist and flavorful and a great addition for any BBQ! Oh ravioli! Ravioli is such a delicious meal and this version is even better! These are breaded and baked which makes them crispy on the outside with the creamy, cheesy center nice and warm! This is a great option if you are looking for appetizer options for a party. If you are a person who keeps a bag of frozen ravioli in the freezer, you will love this recipe! This blows regular ravioli and sauce out of the water! The breadcrumbs make a fantastic crust that everyone will love!
