Mashed potatoes are a great side dish and easy to make but sometimes you end up with leftovers that you want to change up. These Baked Mashed Potato Pancakes are flavorful and a healthy option compared to frying. Also, with Hanukkah coming up this weekend, this is a great recipe if you have no choice but to avoid the fried foods. While I know oil has important significance, if you are under doctors orders to avoid those foods you can still try to enjoy an alternative, you can also remove the bacon to make them diet compliant!
