Tacos are such a great meal because they are versatile, you can add meat, fish, veggies, cheese….well the sky is the limit! They are also a great option due to how easy they are. This recipe is super easy and it’s perfect for a night where you just want to please. My kids loved being able to add their own toppings and get to personalize their dinners, along with the fact that tacos are a great handheld food made these a huge hit!
Ingredients:
1 lb ground beef
1 package taco seasoning
1 can black beans (16 oz)
1 box hard taco shells
1 cup cheddar cheese, shredded
Lettuce, diced tomatoes, sour cream, salsa, etc for toppings
Instructions:
1) Preheat oven to 375 degrees.
2) In a skillet, cook beef on medium high heat till browned. Drain fat and add taco seasoning, 3/4 cup water and black beans. Simmer for 5 minutes to thicken.
3) Assemble taco shells in a casserole dish so they are facing up. Scoop the meat into shells evenly. Top with cheese.
4) Bake for 10 minutes. Let sit for 5 minutes before serving so the shells don’t fall apart. Top with your favorite additions and enjoy.
