When it comes to making chicken, sometimes you can find yourself getting bored with seasoning. This Garlic Parmesan Chicken has a delicious coating that makes the meat perfectly moist and helps complement the zucchini I used as the side. This cooks quickly so you can have it as a midweek meal. You will love how delicious this is!
Ingredients:
1/4 cup flour
1/2 cup Italian breadcrumbs
1 cup grated Parmesan, halved
1 stick butter, melted
4 boneless, skinless chicken breasts
1 stick butter, halved
2 cloves garlic, chopped
2 zucchinis, sliced into coins
Salt and pepper
Instructions:
1) In a bowl, mix flour, breadcrumbs and half of the Parmesan. In another bowl, melt 1 stick of butter. Dip the chicken into the butter and then into the flour mix, coating completely.
2) In a skillet on medium high heat, melt 1/2 a stick of butter and add garlic. Sauté for 1 minute and add coated chicken. Cook on each side until browned, about 4-5 minutes. Remove chicken from pan and set aside.
3) Add remaining butter to skillet and melt. Add zucchini, salt and pepper. Sauté until tender and top with remaining Parmesan. Remove from pan and serve with chicken.
