A quesadilla can be filled with so many different options and fajitas are one of them! I loved how easy this came together. The spices mixed with the peppers and onions went perfectly and became a lovely, melty mix. A great and delicious meal for any night of the week!
Ingredients:
1/2 lb boneless chicken breast, cut into strips
Salt and pepper
1 tablespoon chili powder
1/2 tablespoon cumin
1 tablespoon garlic powder
1 green pepper, julienned
1/2 white onion, julienned
4 tortillas
1.5 cups cheddar cheese, shredded
Sour cream, guacamole, salsa for topping
Instructions:
1) In a large skillet, coat chicken with salt, pepper, chili powder, cumin and garlic powder. Cook for 6-7 minutes till browned.
2) Add peppers and onions and cook for another 5 minutes until soft. Remove everything from pan and set aside.
3) Wipe out skillet and coat with spray. Place tortilla in skillet and add layer of cheese on half. Add chicken, peppers and onions. Top with more cheese and fold in half. Cook for 5 minutes and flip halfway through. Serve.
