Chicken and Black Bean Quesadilla

Who doesn’t love a quesadilla? These are delicious and very easy to make. The chicken and black beans make this very filling and healthy, plus the if you top it with some avocado and salsa you are looking at a meal that tastes good and is pretty good for you! 

Ingredients: 

2 large tortillas

1 thin cut chicken breast, cubed

8 oz black beans

2 tablespoons lime juice

2 tablespoons garlic powder

2 tablespoons onion powder

1/2 cup cheddar cheese, shredded

Instructions: 

1) In a skillet, add a little olive oil and add the chicken cubes. Cook until chicken is cooked throughly and no longer pink. Add both garlic and onion powders. Add black beans and lime juice and mix well.. Remove from heat.

2) In another skillet, coat with non-stick spray and place tortilla on bottom. On one half of the tortilla, spoon some of the chicken/black bean mix. Make sure only 50% of the tortilla is covered. Sprinkle with some cheese and fold the empty side of the tortilla over to close the quesadilla.

3) Flip the quesadilla over and cook other side until golden brown. Add to plate, cut in half and top with salsa and avocado.
