You have no idea how happy I am that spring is here. Of course, it’s freezing cold today but it’s like the light at the end of the tunnel. Winter is almost over! This recipe is great for this time of year because now gardeners are getting back into the swing of things and growing their own vegetables so if you are one of those that just heads to the backyard for your produce, you grab some and get some herbs and you are in business! These are full of flavor and makes an easy side for any meal you are making.
Ingredients:
2 medium zucchinis, cut into half moons
1 large tomato, cut into chunks
1 tablespoon olive oil
3 tablespoons basil
1 tablespoon thyme
1 tablespoon garlic powder
1 cup mozzarella cheese, shredded
Instructions:
1) Preheat oven to 350 degrees. Spray an 8×8 dish with cooking spray.
2) Combine the zucchinis, tomato, olive oil, basil, thyme and garlic powder in a bowl. Make sure everything is well combined. Add salt and pepper if you wish.
3) Pour into baking dish and top with cheese.
4) Bake for 30 minutes until cheese is melted.
