I love using wonton wrappers in a recipe, they always crisp up nice and crunchy. These Spinach and Cheese Wontons are the perfect appetizer recipe because the wontons get perfectly crunchy. I also love this because they are quick to make and full of vitamin rich spinach so you can not feel super guilty about indulging. Spinach Ricotta Penne

I love how creamy and rich the sauce on this recipe came out. Not only was is delicious but it clung to the penne perfectly so every bite gives you flavor. This Spinach Ricotta Penne is a perfect comfort food recipe when you want some flavor but still get your vegetables. I love using spinach in recipes because it’s so versatile and this dish is no different. Lemon Roasted Asparagus

I love making asparagus as it is so easy to prepare and use for so much. I usually make Parmesan Roasted Asparagus and it always comes out perfect but asparagus is one of my husband’s favorite sides and when he came home from the store with a big batch of fresh asparagus and some lemons, I knew exactly what he was looking for. Lemon is a great summer fruit because it gives a freshness to everything and it goes perfectly with garlic so you know that this is a match. Tomato Alfredo Ziti Bake

Well after a nice week in Florida, it’s back to business! I’m coming to you today after starting a new job so super easy dinners with no prep are really in my wheelhouse right now. This is a beyond easy recipe. It’s literally boiling and mixing. You can use canned sauce for this if you want but I make my own and I found it really makes the flavor incredible. If you spend some free time on a weekend making a batch of each sauce, all you need to do it boil and bake! You can find my Alfredo recipe here and my homemade sauce recipe here.
