Shrimp Scampi

This is a classic dish for a reason. The garlic and lemon juice combine for a delicious sauce that’s delicious and light yet coats the pasta and shrimp for an amazing flavor! Since it’s now getting warmer out, this is a great dinner for those summer nights where you sit outside because this won’t make you feel heavy but it doesn’t skip the flavor because of it. I recommend using fresh squeezed lemons and cutting a few extra pieces for garnish and to give a little more lemon onto your shrimp.  Continue reading “Shrimp Scampi”

Grilled Mahi Mahi with Corn and Avocado Salad

Grilled Mahi Mahi with Corn and Avocado Salad

This is such a delicious way to prepare mahi mahi, it’s so easy and flavorful! This grills up nice and quick and goes perfectly with the salad. My husband and I had a kid free night a few weeks back and decided to stay home and have a night of cooking things that we always want to try but our children would never let us hear the end of for making it. I used frozen filets and just let them thaw till it was time to grill. You can also prep the salad ahead of time and put in the fridge till it’s time to eat. For something so easy, it tasted absolutely amazing! I practically inhaled the whole plate and wished I made more because it was that good!  Continue reading “Grilled Mahi Mahi with Corn and Avocado Salad”

Tuna Casserole

Tuna Casserole

I’ve been with my husband for awhile now and when we first moved in together he told me about one of his favorite dinners growing up was his mom’s tuna casserole. Once he told me that I had to contact my mother-in-law and get the recipe. I made it for his birthday that year and he was so happy to have this comfort food again that he stuffed himself! Now I keep this recipe on standby when I want to give him a little comfort food. His favorite way to eat this is with lots and lots of pepper so if you have a tuna fan in the house and need something easy to prep and quick to bake, this is your go to recipe!  Continue reading “Tuna Casserole”
